Tagliatelle Mushroom Bolognese

• Ingredients
   - 8 oz. mushrooms
   - 1 carrot, minced
   - 1/2 medium onion
   - 1 clove garlic, minced
   - 3 tbsp. jovial extra virgin olive oil
   - Pinch of thyme
   - 18 oz. jovial crushed tomatoes
• Instructions
   1. Add mushrooms, carrots, onion, and garlic to the bowl of a food processor. Pulse until coarsely chopped.
   2. Ina large skillet, add oil, thyme and vegetables. Cover and cook on low heat for 5 minutes.
   3. Add tomatoes and salt to taste. Cook uncovered, on medium heat, for 15 minutes until the sauce thickens.
   4. Cook pasta according to package instructions.
   5. Toss pasta with sauce and serve.

1. Bring 3 quarts of water to a rolling boil.
2. Add salt as desired.
3. Cook pasta on high heat, stirring frequently.
